Ingredients:
For the yeast mixture:
- 1 1/2 tsp fresh yeast
- 1 tsp sugar
- 3 tbsp lukewarm water
For the dough:
- 4 cups spelt flour
- 1 tsp salt
- 1 1/4 cup lukewarm water
Method:
- Put the yeast to a small cup or a glass, add some sugar and water, and stir to dissolve the yeast.
- Place the glass in a larger bowl of warm water or in a warm place and let the yeast bubble and expand.
- In a large bowl, mix the flour and salt together. Add the yeast mixture, salt and water.
- Start by stirring the dough with a wooden spoon, then start kneading it until it no longer sticks to your hand. You can add a tablespoon or two of olive oil or some more flour if it’s too sticky.
- Place the bowl of dough in some warm place, cover it with a towel and let it rise for about half an hour.
- After this time, knead the dough for a few seconds and start forming little buns. You should end up with 6 of them but it depends on the measurements you use.
- Finally you can sprinkle some seeds of choice on top of the buns and bake them at 390F (180C) for about 20 minutes.
