Super simple spelt buns

Ingredients:

For the yeast mixture:

  • 1 1/2 tsp fresh yeast
  • 1 tsp sugar
  • 3 tbsp lukewarm water

For the dough:

  • 4 cups spelt flour
  • 1 tsp salt
  • 1 1/4 cup lukewarm water

Method:

  1. Put the yeast to a small cup or a glass, add some sugar and water, and stir to dissolve the yeast.
  2. Place the glass in a larger bowl of warm water or in a warm place and let the yeast bubble and expand.
  3. In a large bowl, mix the flour and salt together. Add the yeast mixture, salt and water.
  4. Start by stirring the dough with a wooden spoon, then start kneading it until it no longer sticks to your hand. You can add a tablespoon or two of olive oil or some more flour if it’s too sticky.
  5. Place the bowl of dough in some warm place, cover it with a towel and let it rise for about half an hour.
  6. After this time, knead the dough for a few seconds and start forming little buns. You should end up with 6 of them but it depends on the measurements you use.
  7. Finally you can sprinkle some seeds of choice on top of the buns and bake them at 390F (180C) for about 20 minutes.
