Zucchini Stew

Ingredients:

  • 1 tbsp olive oil
  • 2 cloves of garlic
  • 1 onion
  • 1/4 leek
  • 2 bell peppers
  • 11 oz (300g) mushrooms
  • 2 medium zucchinis
  • 8 plum tomatoes
  • 2 carrots
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp turmeric
  • 2 tsp sweet paprika
  • 3/4 tsp hot paprika

Method:

  1. Mince the garlic and chop the onion. Heat some olive oil in a pressure cooker or a regular pot. Sauté garlic and onion until fragrant.
  2. Slice the leek and mushrooms, cut the bell peppers into bite-size pieces, as well as the zucchinis, carrots, and tomatoes.
  3. Place all the vegetables in a pot and season to taste. Stir well and close the lid of the pressure cooker. Cook for 15 minutes or for 30 if using a regular pot.
