Ingredients:
- 1 tbsp olive oil
- 2 cloves of garlic
- 1 onion
- 1/4 leek
- 2 bell peppers
- 11 oz (300g) mushrooms
- 2 medium zucchinis
- 8 plum tomatoes
- 2 carrots
- 1 tsp salt
- 1/4 tsp black pepper
- 1 tsp turmeric
- 2 tsp sweet paprika
- 3/4 tsp hot paprika
Method:
- Mince the garlic and chop the onion. Heat some olive oil in a pressure cooker or a regular pot. Sauté garlic and onion until fragrant.
- Slice the leek and mushrooms, cut the bell peppers into bite-size pieces, as well as the zucchinis, carrots, and tomatoes.
- Place all the vegetables in a pot and season to taste. Stir well and close the lid of the pressure cooker. Cook for 15 minutes or for 30 if using a regular pot.
