Banana Pancakes

IMG_6045Ingredients:

  • 4 tbsp ground flax seeds (you can grind whole flax seeds in a coffee grinder)
  • 10 tbsp warm water
  • 2 ripe bananas
  • 1 tsp cinnamon
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 1.5 oz (45g) dark chocolate, chopped
  • 1 heaping tbsp coconut oil

Toppings:

  • peanut butter, tahini
  • maple syrup, agave
  • banana slices
  • berries (blueberries, raspberries, blackberries, strawberries)
  • other fresh fruit of choice
  • jam
  • coconut yogurt, coconut whipped creamIMG_6043

Method:

  1. Mix ground flax seeds with water and leave to soak for 5 minutes. You should obtain an egg-like consistency.
  2. In a bowl, mash the bananas with the back of a fork, add your flax mixture, cinnamon, oat flour, oats, and chocolate chunks. Mix until well combined.
  3. Heat some coconut oil in a pan. When it’s very hot, pour 1 tbsp of the pancake batter and cook the pancakes. When you start to see them turning brown on the edges, flip them and cook the other side.
  4. Serve with your favorite toppings and enjoy!IMG_6046This recipe makes about 8 pancakes (2 portions).
