Ingredients:
- 4 tbsp ground flax seeds (you can grind whole flax seeds in a coffee grinder)
- 10 tbsp warm water
- 2 ripe bananas
- 1 tsp cinnamon
- 1/2 cup oat flour
- 1/4 cup oats
- 1.5 oz (45g) dark chocolate, chopped
- 1 heaping tbsp coconut oil
Toppings:
- peanut butter, tahini
- maple syrup, agave
- banana slices
- berries (blueberries, raspberries, blackberries, strawberries)
- other fresh fruit of choice
- jam
- coconut yogurt, coconut whipped cream
Method:
- Mix ground flax seeds with water and leave to soak for 5 minutes. You should obtain an egg-like consistency.
- In a bowl, mash the bananas with the back of a fork, add your flax mixture, cinnamon, oat flour, oats, and chocolate chunks. Mix until well combined.
- Heat some coconut oil in a pan. When it’s very hot, pour 1 tbsp of the pancake batter and cook the pancakes. When you start to see them turning brown on the edges, flip them and cook the other side.
- Serve with your favorite toppings and enjoy!This recipe makes about 8 pancakes (2 portions).
